Mardin Cuisine

While the Mardin cuisine is a bit different to the rest of the region, kebabs are still dominant. As in many places you cannot find many of the local dishes served in the restaurants. However, you get a taste of some, such as stuffed ribs, tripe, meatballs and the meat bread.
The Mardin kebab, unlike most others, does not use meat put through a mincing machine, instead being finely cut with a meat cleaver. The dish has a very special taste and is well worth trying.
